Must. Have. Tacos.

Oh boy! Most of you know that I’m a peaky eater, so when I figured out tacos were not all that healthy, I almost died! *Insert. Dramatic. Music. Here.* I love tacos! How can I possibly live without them?!

My challenge in taking care of myself has been to figure out healthier versions of my favorite foods. A lot of the time it just requires me to cook it at home, from scratch, so I know exactly what and how much is going into my food.

Sometime over the last week, cooking has just clicked. I was stressing about “how to cook chicken. Ew! I don’t want to touch raw chicken meat!” I found chicken tenderloins at the store that didn’t gross me out when I try to cook it…I know, I have issues lol…I can use the tongs so I don’t have to touch them and BOOM! no longer gross lol HA!!!

Without further adieu, here is how I get my taco fix for less than 500 calories. :)

Healthy Taco Fix

  • 1/2 cup Black Beans reduced sodium
  • 1/2 cup Brown Rice
  • 1/2 cup (approximately 4 oz.) plain Chicken Breast cooked with a little bit of Pam on the skillet.
  • As much lettuce as I want.
  • 1/4 cup Mexican Four Cheese Blend
  • 5 tablespoons Ortega Taco Sauce

For a total of 483 calories and 42 grams of protein.
